Paleo Kale Salmon

Serves: 3-4
- ¼ cup of pine nuts (or walnuts or cashews)
- 3 cloves of garlic
- 2 cups of packed kale leaves (stems removed)
- 3 Tbsp. of olive oil
- generous pinch of salt and pepper
- juice of 1 lemon
- Combine everything in food processor or mini chopper and pulse a few times.
- Scrape down sides and pulse again until you reach desired consistency
- Slather over seafood, pasta, sauteed veggies.... the possibilities are nearly endless!
